  • 4 large eggs
  • 1/8 tsp. salt
  • 3/4 cup sugar
  • 1/2 pt. heavy cream
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. vanilla extract
  • 1 1/2 cups strong brewed brazibeans dark roast coffee
  • 1 can sweetened condensed milk
  • 2 tbsp. powdered sugar
  • Additional ground cinnamon
  • Step 1: Stir sugar over medium heat in a heavy saucepan until completely melted and browned. Carefully pour melted sugar into an 8-inch round baking pan to completely coat the bottom. Sprinkle 1/4 teaspoon ground cinnamon evenly across the sugar surface.
  • Step 2: Pre-heat oven to 350°F. Beat eggs in a large bowl and whisk in condensed milk, vanilla extract, 1/4 cup cream, and salt. Mix in coffee and blend well. Place prepared baking pan in a larger, shallow pan and por flan mixture. Fill larger pan with 1 inch of hot water and bake for 60 minutes or insert knife in center to check doneness. Remove baking pan from hot water and cool on rack for 1 hour. Cover with a clean cloth and chill for at least a couple of hours or overnight.
  • Step 3: Mix in remaining cream, remaining 1/4 teaspoon cinnamon, and powdered sugar in a medium mixing bowl. Use an electric mixer on low speed and mix until cream starts to thicken. Increase speed to high until stiff peaks form.
  • Step 4: Run knife around edge of pan to loosen up the flan. Invert pan onto a serving plate with rim to contain excess liquids. Cut into wedges and add a dollop of whipped cream on each serving. Sprinkle it with cinnamon powder.
